Hunting with the chef

Description

Roe deer and wild boars are diffused all over the country but the central regions are definitely the most densely populated. You will hunt at sunrise and sunset, while the animals will come in the fields to feed. Typically the hunting method is to hide in a high-seat overlooking small fields in the middle of the forest. In this area is also possible to hunt on a spot and stalk base with the opportunity to spot many more animals. According to the hunter’s shape is possible to walk, on an easy terrain, up to 10 km per day. During a single day hunt you may spot up to 15 – 20 roe deer and check several good males looking for the right trophy. Wild boars can also be hunted by night, slowly walking in the dark and taking advantage of the low light of the moon to find the animals in the fields. When hunting both roe deer and wild boar a typical day would start very early in the morning as hunters will have to be on the hunt before sunrise and spend the morning, approximately until 10 a.m., on the hunt. We will hunt again from a couple of hours before sunset until dark. While hunting only wild boars the hunt is usually taken only in the afternoon and, eventually, night.

Detailed Itinerary

Day 1

Arrive in Rome and meet at the airport your Italian Safari Tour Director, and, together with a professional driver, transfer to the hunting area in Umbria. Depending on your time of arrival and your preferences, you will have the opportunity to stop in Montefalco wine region for a wine tasting. Arriving at the hunting estate, check in at the  private villa hosting you during the next few days.

Day 2 

First hunting day. Hunters will stalk roe deer and wild boars at sunrise and sunset. During the rest of the day, time available to recover from the flight and enjoy the swimming pool or visit the estate.

Day 3

Today you will open your culinary experience in Umbria together with Polito chef, a well known Italian chef and hunter. This first day will have truffle as the “king of the kitchen”: you will start with a truffle hunt with the help of a trifulau and his dog in the nearby forest, while in the afternoon you will be guided by Polito in the preparation of different truffle based courses and taste them at dinner.

Day 4 / 5

Two hunting days. During the rest of the day time available to relax in the villa’s swimming pool, enjoy some fishing  in the small lake or visit the surrounding region, including visits of Assisi or Città di Castello medieval  villages, Montepulciano and Chianti wine regions, olive groves and others. A driver might be available both days for non hunters, allowing them to take advantage of the endless tourism, shopping and cultural opportunities of  Umbria and Tuscany.

Day 6

The second gastronomic experience focuses on Chianina meat: the mythical bread giving Fiorentina Steak. You will have the opportunity to discover this large cow in the estate’s livestock and, in the afternoon, preparing different dishes during Polito chef’s cooking class at the villa. The dinner will be based on your preparations during the class as well as the huge Fiorentina.

Day 7

After cooking and hunting for a few days, today you will finally combine the two activities learning creative ways to cook your wild boars and roe deer shot in the previous days. The day will end with the gourmet dinner prepared by Polito chef and based, on top of what you prepared during the class, also on his very special game preparations, making him one of the greatest Italian wild game chef.

Day 8
